Para hacer matcha, los arbustos de té se cubren antes de la cosecha para evitar que la luz solar directa llegue a las hojas. Esto estimula la producción de clorofila para intensificar el color, así como la producción de aminoácidos sabrosos. Después de la cosecha, las hojas se procesan cuidadosamente y se muelen en piedra para preservar el color y el aroma. Nos encanta el dulce sabor umami de este matcha para té, postres y cócteles.
