A Curio Curated Thanksgiving Menu
The menu planning and prep for Thanksgiving can be overwhelming, especially when you are in charge of the turkey. Luckily, we have a brining kit that will help you tackle the task of turkey prep and a few other spices (with recipes!) to ensure your Thanksgiving is a spice-filled success!
Turkey Talk:
To avoid a dry and flavorless turkey, try brining your bird! Brining before roasting helps to ensure that your holiday bird is moist and well-seasoned. Our brining spices make the perfect addition to either a wet or dry brine for a 12–18 pound turkey - just follow the simple instructions included on the package.
Staple Sides With A Curio Twist:
Ferla Spice, Sage & Potato Dressing:
Dressing is simply stuffing that’s baked on its own instead of filling a roasted bird. Particularly with smaller holiday gatherings, dressing is an especially appealing option. We make dressing in individual portions — small mounds baked on a sheet. That way, every serving includes both the soft, satisfying interior and crispy browned bits.
This version is inspired by the flavors of Sicily. We start with Ferla Spice, our blend of Sicilian herbs and sea salt with a kiss of chile and add dried sage and a little pecorino cheese. Chopped vacuum-packed Italian chestnuts introduce a hint of earthy sweetness but are completely optional.
Kandy Spiced Maple Cranberry Relish:
This cooked relish retains a fresh bite, is pleasantly sweet-tart, and unusually spiced (the intricate flavors of our Kandy Spice complement both sweet and tart components). The relish takes inspiration from Italian mostarda, American cranberry sauce, and British chutney but is not exactly any of those — it is delicious.
Da Lat Roasted Delicata Squash:
Da Lat Spice has lively, bold notes that complement root vegetables and squash. Delicata squash has a mild, sweet flavor that pairs well with the cassia, cocoa nibs, and pepper in this blend.
Last, But Not Least - Dessert:
Berbere Spiced Chocolate Bread Pudding:
Our Sēti Berbere is the ‘secret’ ingredient in this very chocolaty, crowd-pleasing bread pudding. The flavors are amiable and cozy with notes of clove, mace, allspice, and coriander and a sparkling hint of chile. Dust the top with powdered sugar and serve it family style right from the baking dish. Don’t forget to pass around a generous bowl of whipped cream scented with korerima (Ethiopian black cardamom)!
Spiced cookies are holiday favorites in Northern Europe. This recipe is a riff on traditional German cookies called Pfeffernüsse (‘pepper nuts’). In our version, Kandy Spice takes center stage and a lemony glaze plays a bright, supporting role.
