Fire up the grill for these succulent shrimp and cherry tomato skewers, seasoned with sun-drenched Sicilian flavors from Ferla Spice. This quick and vibrant dish is perfect as a Mediterranean appetizer or light summer main. With a squeeze of lemon and a hint of sea salt, each bite delivers a smoky, herbal burst that’s ideal for alfresco dining. These grilled shrimp skewers are a flavorful go-to for easy entertaining or healthy weeknight meals.
Soak the skewers in warm water for about 20 minutes. Peel the shrimp, removing the heads but keeping the tails on.
Put the shrimp and tomatoes into a mixing bowl and drizzle with the oil. Sprinkle with Ferla Spice and add a good pinch each of salt and pepper. Gently toss until the shrimp and tomatoes are evenly coated with herbs.
Load the skewers with shrimp and tomato (three each per skewer, alternating) To keep the shrimp from spinning on the skewers while grilling, push the skewer through both the tail and the body.
Grill over medium heat for 2–3 minutes before turning and cooking the other side for another 2–3 minutes. The shrimp will be opaque and pink.
Remove the skewers and mound the shrimp and tomato on a serving dish. Sprinkle with lemon juice and serve immediately.

We haven’t tried this recipe in an air-fryer (we need to get one!), so I can’t answer from personal experience. BUT, a quick little reaseach assures me that it’s fine to use bamboo skewers in an air-fryer, same as you would on the grill or under the broiler. The key, no matter the cooking technique, is to soak the skewers in water for about 10 minutes before using them. This helps to keep them from burning. Let us know how you go!
