Native to Central America, epazote has been used for millennia in the region and is essential to many classic Mexican dishes. In addition to adding a distinctive earthy flavor, epazote is a practical addition to a pot of beans; the herb can help aid in digestion and reduce bloating! Note: best used in small quantities.   • Special Tips Epazote has a very powerful petroleum-like aroma, and a little goes a long way. Use a pinch in your cooking water for dried beans, or very early in cooking to gain the wonderful flavor and digestive properties without the aroma becoming too strong.
