Slightly piney, peppery, and fruity, juniper berries are most famous for adding their distinct aroma to gin, but have many other flavorful applications. Often found in Northern European, specifically Scandinavian, and some Native American cuisines, juniper adds an ephemeral fresh, clean aroma to cabbage, pork, and sauerkraut. It is also wonderful in brines for fowl, and wild game roasts.
