Makes 1 cocktail.

Try this gin-and-tonic when you need a getaway but can’t take one! Its extra emphasis on botanicals makes for a refreshing change. 

For the rim:
2–3 tablespoons Aegean Salt

For the cocktail:
1½ ounces gin (an Old Tom style is nice)
1  ounce fresh grapefruit juice
1½ ounces tonic water
5 drops King Floyd’s grapefruit-rosemary bitters

Spread the Aegean Salt on a rimmed saucer or in a flat-bottomed bowl. Fill another bowl with about a half-inch of water. Dip the rim of a cocktail glass into the water, then dip into the salt. Fill the glass with ice.

In a cocktail shaker, combine cocktail ingredients over ice and shake. Strain into the prepared cocktail glass.
