This decadent corn pudding is our version of a favorite holiday side, and we think there’s some kind of magic in the combination of Lunar Chai, sweet corn, and cheese. We hope you agree!
Ingredients

3 eggs

16 ounces (2 cups) cottage cheese

3 tablespoons unsalted butter, melted

¼ cup cornstarch

1 ½ teaspoon sea salt

1 teaspoon Lunar Chai, finely ground

16 ounces frozen corn kernels
-
8 ounces Monterey jack cheese, shredded

Black pepper
Directions
Preheat the oven to 375° F. Grease a 9”x13” baking dish or 3-quart casserole with butter or baking spray. Set aside.
Put the eggs and cottage cheese into a mixing bowl; whisk to combine. Add the melted butter and stir it in. Add the cornstarch, baking powder, sea salt, ground Lunar Chai plus a pinch of black pepper to the bowl and whisk to combine. Add the corn and half of the cheese and use a spatula to fold it into the mixture.
Pour the mixture into the greased baking dish or casserole and spread it out evenly with the spatula. Sprinkle the remaining cheese over the top.
Bake, uncovered, until the pudding is set but still wiggles in the middle (the cheese has browned). If the pudding seems done but hasn’t browned, broil for 2-3 minutes.
Let stand for a few minutes, then serve warm.
Recipe Note
Be sure to grind the chai blend to a powder — we find that a clean coffee grinder works well (to clean, simply grind dry rice in your grinder then wipe clean). You can substitute fresh corn cut from the cob instead of frozen.
