M. Montréal Sausage Patties

Makes 8 small patties or 4 burger-sized patties.

Say bonjour to homemade pork sausage! With ordinary ground meat, a little bit of bacon, and our super-flavorful Monsieur Montréal you’ll have sausage in the skillet in no time. The mix can be cooked as small sausage patties for breakfast or larger ones to fill a sandwich for lunch or supper. The maple syrup is optional, but we like the layer of sweetness and boost to browning.

1 pound ground pork
2 strips uncooked bacon, very finely minced
1 teaspoon sea salt
4 teaspoons Monsieur Montréal, more to taste
2 teaspoons maple syrup

Put all the ingredients into a bowl and hand mix until well combined. Divide the mixture into four or eight equal portions. Gently pat each portion into a ball, then flatten it into a patty shape that’s about ¾-inch thick.

Set a non-stick skillet over medium heat. When the pan is hot, add the patties. Give each a gentle press with a spatula and cook for 3 minutes. Turn the patties over and cook the second side for 3 minutes. Depending on the size of the pan you may need to work in batches to avoid crowding the pan.) Serve hot or warm.
