A spreadable cheese that highlights the mild but bold, citrusy flavor of the preserved and salted green peppercorns. Great on sandwiches, crackers, or crostini, paired with anything from fresh fruit to roasted vegetables. Use a good quality feta cheese here — sheep or goat’s milk — for its superior taste and creamy texture. Makes about 2 cups.
Note: To make this using a hand mixer, make sure that the cheeses are soft and at room temperature to make whipping them easier.

8 ounces chèvre cheese

8 ounces creamy feta cheese

1 tablespoon Cambodian Salt-Cured Pepper, crushed

1 small clove garlic, grated

1 lemon, zest and juice
Directions
Put all the ingredients into the bowl of a food processor fitted with the metal chopping blade. Process until smoothly combined.
Store in an airtight container in the fridge; bring to room temperature for serving.
