French toast is a classic weekend-breakfast and we like to add the cozy flavors of our Pumpkin Spice blend to it. Maple syrup (the real stuff!) is the traditional topping, but really, anything goes — applesauce, whipped cream, mascarpone, powdered sugar, or toasted almonds would be delicious, too.
Notes: When cooking the toast, you don’t want to crowd the pan. If your skillet or griddle isn’t big enough to accommodate all four slices at once, it's ok to work in batches. Justpreheat your oven to 200° F and hold the cooked slices in the oven as you finish the others. A baking sheet with a rack set inside is great for this. And, remember to add butter to the pan between batches.

Ingredients

3 eggs
- 1 cup half and half
- ¼ cup sugar
- 1 teaspoon vanilla extract

1 teaspoon Pumpkin Spice

¼ teaspoon sea salt
- 4 slices (thick) brioche or challah bread
- 3-4 tablespoons unsalted butter
- Maple syrup, for serving
Directions
Put the eggs, half and half, sugar, vanilla, Pumpkin Spice, and salt into a large bowl and whisk to combine. Dunk the bread into this mixture and turn to coat; let sit for 1 minute. (If the slices are not fully submerged, turn them over and let them sit in the mixture for another minute.) Transfer the slices to a sheet pan.
- Set a sheet pan with a cooling rack in it next to the stove.
- Set a large non-stick skillet or griddle over medium-high heat. Add a tablespoon of butter to the pan and tip the pan (to coat the bottom) as the butter melts.
- Add the soaked bread to the pan. Add more butter to the pan as needed or when the pan looks dry. Cook until golden brown on both sides, flipping once.
Serve warm with maple syrup alongside.
