Directions

1. Place the meat on a rimmed baking sheet. Sprinkle the salt on all sides of the meat and rub it in; then, sprinkle on the Texas BBQ, patting it to make sure it coats all sides.

2. Place the baking sheet in the refrigerator and let the meat rest, uncovered, overnight.

3. Remove the baking sheet from the fridge, transfer the meat to a large roasting pan, and set aside at room temperature for 30–45 minutes. (Discard any juices collected on the baking sheet.) Preheat the oven to 300° F. 

4. Cover the roasting pan with foil and crimp the edges to seal. Place the pan in the oven and roast until the meat is tender, about 4 hours for brisket or 2 1/2 hours for ribs. 

5. 15 minutes before finishing, remove the foil and continue to cook.

6. Remove the pan from the oven and let the meat rest for 30 minutes before cutting and serving.
