This old-school New England favorite is enhanced by the dynamic herbal aromas of Boston Blend and its bright notes of Sri Lankan white pepper. Baked scallops are perfect for both weeknight dinners and entertaining — they’re a simple, but quick-to-make, indulgence. Locally, there’s a long-standing debate about crackers for baked seafood, Ritz or Townhouse. We say choose your own adventure!
Ingredients

6-8 dry sea scallops, cleaned and side muscle removed
- ¼ teaspoon sea salt
- 13 buttery crackers, crushed

1 teaspoon Boston Blend
- 3 tablespoons unsalted butter
- Lemon wedges, for serving
Directions
Preheat the oven to 425°F. Place an ovenproof dish in the oven to heat.
- Pat the scallops dry with a clean tea towel and season them with the salt. Put the crackers and Boston Blend into a separate bowl and toss to mix. Set both aside.
- Remove the dish from the oven and add the butter to it. When the butter has melted, pour almost all of it into the bowl with the crackers; stir to mix.
- Transfer the scallops to the baking dish, arranging them in a single layer and leaving a little space between them. Top them with an even layer of the cracker mix (use all of it).
- Place the dish back in the oven and bake until golden brown, 8-10 minutes. Serve with lemon wedges on the side.
