Finish your dishes with a flourish! Drizzle a little hot honey on grilled chicken, vegetables, or fruit before serving. Or, include a little pot of it on a cheese board — hot honey pairs well with sharp cheddar and toasted walnuts or with hard cheeses like pecorino and Parmesan.
Ingredients
-
1¼ cups honey
-
2 teaspoons Sicilian chile flakes, crumbled a bit
- 1 lemon, zest and 4 teaspoons juice
Directions
Pour the honey into a small, heavy saucepan set over low heat and add the chilies. Warm the honey gently until it loosens and is just hotter than lukewarm. Remove the pan from the heat and stir in the lemon zest and juice. Transfer the honey to a clean jar with a tight-fitting lid.
- This honey keeps at room temperature for several days; refrigerate for longer storage (bring it to room temperature before serving).
