For a taste of the season, skip the coffee-shop line and make yourself an indulgent, homemade pumpkin spice latte. You’ll thank yourself, it’s so easy to do and so good! Or, make a batch to serve as an after-dinner treat.
Note: The base will keep, covered, for one week in the fridge. Or, spoon into 3-tablespoon portions and freeze for up to six months. Recipe makes 1 latte with enough pumpkin base to make 10 more.

Ingredients
For the pumpkin base:
- 1 can (15 oz) pumpkin puree
- ¼ cup dark brown sugar
- 1 teaspoon vanilla extract
For 1 latte:
- ½ cup brewed coffee or cold brew
- ½ cup milk or plant-based milk

3 tablespoons Pumpkin Spice Latte mix
For garnish:
- Whipped cream

Directions
Make the pumpkin base Put the pumpkin puree, brown sugar, and vanilla extract into a medium pot set over medium-low heat. Cook, stirring occasionally, until the mixture is bubbling and starting to caramelize, 5-10 minutes. Set aside.
Make the latte Add the milk to a small saucepan set over medium-high heat. When the milk begins to boil, whisk in the Pumpkin Spice Latte mix. Shut off the heat and add the coffee plus 3 tablespoons of the pumpkin base. Whisk to combine — or use an immersion blender for a smoother, more velvety texture.
- Pour into a mug and top with whipped cream and a light dusting of the cinnamon.
