In this recipe, our Cuco’s Adobo once again proves its worth as an all-purpose seasoning. Here it adds savory, punchy flavors to caramelized onions and creamy Greek yogurt. This recipe is a lifesaver for last-minute entertaining — it’s made with pantry staples and takes only about 15 minutes to whip up.
Notes: You can substitute sour cream for the yogurt, but reduce the oil to 2 tablespoons. To introduce a sofrito vibe, trying adding half a green bell pepper, diced, when you add the adobo to the pan.
Ingredients

¼ cup olive oil

1¼ cups diced white or yellow onion (about half a large onion)

¼ cup minced celery (about 1 rib)

1 teaspoon sea salt, more to taste

1½ teaspoons Cuco’s Adobo

1 clove garlic, minced

1 tablespoon white wine vinegar

1 cup (8 ounces) full-fat Greek yogurt
Directions
Put the oil and onion and celery into a large skillet set over medium-high heat and add the salt. Sauté, stirring frequently, until the onions soften and are starting to brown, 8-10 minutes.
Add the Cuco’s Adobo to the skillet and keep cooking until the edges of the onions are well browned, about 2 more minutes. Add the garlic and cook for another minute, then add the vinegar and scrape up any browned bits stuck to the pan.
Transfer the onions to a bowl and set aside to cool for about 5 minutes. Add the yogurt and stir until thoroughly combined. Taste and add more salt, adobo, or vinegar if desired.
