Class — The Art of Spice Blending

Delve into the enchanting world of spice blending with Claire Cheney (our blender-in-chief) and chef Josh Mamaclay (yes he’s the guy who tastes spices on our Instagram feed!). They’ll introduce you to Curio’s distinct flavor theory and the principles that we use to make the exquisite blends we’re known for. Claire and Josh will guide you through tasting different spices, teach you some spice techniques, and then they’ll help you make a spice blend right in your own kitchen. We’ll send you a set of five spices prior to class so you can join in on this hands-on, sensory class in the comfort of your home.
Claire and Josh will teach you about flavor and aroma and how attention to details such as texture and color, or techniques like toasting, can make a blend sing! And, they’ll share insider knowledge about layering flavor, sensory analysis, and training your palate.
Your ticket includes our signature Spice Flavor Wheel, blending recipes, the spices you’ll need to make the blend during class, plus a worksheet to help you create a blend of your own! After class we’ll share a few extra resources and recipes plus a link for unlimited access to a recording of the class.
What equipment do I need to take this class? You’ll need an electric spice grinder (aka a coffee grinder such as this one) OR mortar and pestle for making your blend. If you don’t own a mortar & pestle, consider adding one to your culinary toolkit — it’s versatile, easy to clean, and we’ll show you how to use it during class. (We recommend a size 1 or bigger.)
Other than that, you’ll only need measuring spoons and small mixing bowls, a small skillet, and ready access to your stove.

Claire Cheney founded Curio Spice in 2015 out of an obsession for spices and the stories they tell. She hails from Massachusetts and Maine, where she learned to forage for wild foods and build her own curiosity cabinets. She went to Oberlin college where she cooked for 80-member co-ops and studied food writing, then went on to work in specialty coffee and fine dining. As Curio’s blender-in-chief she creates original blends for our Signature line inspired by her extensive travels to spice origins, and also studies time-honored blends for our Classic line. She lives with her family near Cambridge, MA.
Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University and, since then, Josh has worked in pizza joints, fine dining restaurants, a chocolate factory, and a test kitchen. Now, when he isn't tasting every spice possible or photographing everything at Curio, Josh instructs on Milk Street TV and at the Milk Street Online Cooking School. Otherwise, he's usually thinking or talking about food, singing with his husband while strumming his ukulele, or leading intrepid adventurers through a fantasy-filled game of Dungeons & Dragons.
