Excited about using spices in your cooking but uncertain about how to get started? Our Flavor 201 classes are designed to help you feel at ease using spices intuitively in your everyday cooking while offering a deep dive into particular topics. 

Salt and pepper are so basic to cooking—it’s easy to take them for granted. But once you discover the depth and variety to both of these elemental ingredients, your imagination is the only thing holding you back.

We’ll start by learning WHICH type of salt to use when and how the chemistry of this mineral affects your meal, and talk about ‘merroir’ (the oceanic version of terroir). Then we’ll journey on to peppercorns, the world’s most widely traded spice, and talk about why it’s not just a little kick of heat that these dried berries deliver. You’ll learn about varieties of salt and pepper with remarkable properties for adding depth, enchanting aromas, or uplifting flavor. 

Claire will demonstrate making cacio e pepe - the iconic Italian pasta dish that lets pepper express it's aromatic prowess, a refreshing winter citrus salad that comes alive with textured flake salt and citrusy peppercorns, and to finish, an easy way to jazz up ice cream including the best salted caramel to top it off.

Your ticket for this demonstration-style class includes recipes, samples of our Voatsiperifery (wild pepper) and Cyprus sea salt to try at home, and unlimited access to a recording of the class.

Claire Cheney founded Curio Spice in 2015 out of an obsession for spices and the stories they tell. She hails from Massachusetts and Maine, where she learned to forage for wild foods and build her own curiosity cabinets. She went to Oberlin college where she cooked for 80-member co-ops and studied food writing, then went on to work in specialty coffee and fine dining. As Curio’s blender-in-chief she creates original blends for our Signature line inspired by her extensive travels to spice origins, and also studies time-honored blends for our Classic line. She lives with her family near Cambridge, MA.
