Made from the ground leaves of the native sassafras tree, gumbo filé powder has its roots in Choctaw cuisine. Later adopted as a thickener for gumbos and stews when okra was not in season, it has become a staple in Cajun and Creole cuisine. With its earthy, slightly citrusy aroma, we love it in soups, stews, jambalaya, and of course gumbo!
